Enjoying the Fruits of the Season!

I got more wonderful produce at Lisa's the other day.  It was so exciting to have garden-fresh produce!  I made what I decided to call "Garlic Chicken Pasta with Fresh Summer Vegetables". :)

Boil some pasta.  Mix in a pan about 1/4 cup olive oil, garlic, salt, pepper, and a little parmesan cheese.  Add 1-2 cups of cooked chicken and stir to coat in the garlic-infused oil.


Meanwhile, thinly slice one small yellow squash, and cut in half about 12 cherry tomatoes.

When pasta is fully cooked, place sliced squash in colander and pour pasta and hot water over squash.  Drain squash and pasta and place in serving bowl.

Add tomatoes and snip, cutting into small pieces, six fresh basil leaves.

Add chicken and toss to mix.  Sprinkle with some more parmesan or mozzarella and serve!
